Making Feta Cheese

My family is wild about Feta cheese.  And it’s a good thing that they love it so much, as homemade Feta is easy to make and a great way to use up our excess goat milk.  Feta is a rich, delicious cheese that stores for months in a refrigerated salt brine.

feta cheeseI enjoy making Feta cheese.  If the recipe is followed carefully and all equipment is sterile, the cheese is very difficult to mess up.  The process is fun.  Hands-on steps are very satisfying as you watch, feel and smell the cheese beginning to form. The only downside is waiting for the cheese to develop full flavor, which takes a week or two.
