I enjoy making Feta cheese. If the recipe is followed carefully and all equipment is sterile, the cheese is very difficult to mess up. The process is fun. Hands-on steps are very satisfying as you watch, feel and smell the cheese beginning to form. The only downside is waiting for the cheese to develop full flavor, which takes a week or two.
